Note
Since 1980, the Alberto Boerger Agricultural Research Center (CIAAB) and its successor, the National Institute for Agricultural Research (INIA) have carried out genetic improvement programs in conjunction with breeders' societies of the main beef cattle breeds in Uruguay. . Within the genetic evaluations of Hereford, Angus, Bradford and Limousin breeds, one of the published genetic merit prediction indices, EPD (Expected Differences in Progeny), is related to the cross-sectional area of the Longissimus Dorsi muscle or ribeye area of the steak (AOB). Selection for this characteristic (EPD-AOB) promotes animals with a larger section of the aforementioned muscle, resulting in a larger caliber of the striploin, a high-value cut for the beef industry.
