Abstract
hazai kézműves cukrásziparban az elmúlt évtizedekben számos változás ment végbe, az
ágazat belső problémákkal küzd, továbbá a megváltozott fogyasztói szokásokra is próbál
reagálni. A tanulmány célja a kézműves cukrászipari termékek fogyasztási és vásárlási
szokásainak, illetve az azokat befolyásoló legfontosabb tényezőknek a vizsgálata
Magyarországon. Primer kutatási módszerként a megkérdezés személyes és online
formáját alkalmaztuk. A minta nagysága 538 fő. Az elemzés során leíró statisztikai
módszereket és nem paraméteres eljárásokat használtunk. Az eredmények alapján
kijelenthető, hogy a megkérdezettek többsége fogyaszt cukrászipari termékeket. A
fogyasztók leggyakrabban cukrászdákban vásárolnak a kikapcsolódás, feltöltődés, illetve
a magasabb minőség miatt. A fővárosban élők, felsőfokú végzettséggel rendelkezők és
aktív szellemi dolgozók jobban preferálják a minőségi, de drágább kézműves termékeket.
Az ár leginkább a 20 év alattiak, a falvakban élők és a 100 ezer forint alatti egy főre jutó
havi nettó jövedelemmel rendelkezők számára fontos. ----------------------------------------------- Domestic confectionery has been subject to many changes in the recent decades; this
sector suffers from internal problems and tries to reply to the changed consumer habits.
The objective of this study is to analyse the Hungarian consumer and customer habits
relating to confectionery products, and their factors of influence. As the primary
research method we used personal interviews and online inquiry. The size of the sample
was 538 respondents. Descriptive statistical techniques and non-parametric methods
were used. Results show that the majority of the respondents consume confectionery
products. The consumers mostly purchase products from confectioneries, because of
relaxation and unique, prime pastries. People live in the capital, higher educated people
and white collar workers prefer better the quality, but expensive craftsman products.
Price is the most important for people under 20 years of age, people live in villages and
people with net monthly income of under HUF 100 000.
