El sobreprecio del aceite de oliva ecologico frente al del conventional a nivel minorista, como factor explicativo de su escasa cuota de ventas en Espana

El elavdo precio del aceite de oliva virgen extra ecologico -APVEE- frente al de su homonimo convencional, aceite de oliva virgen extra convencional -AOVEC-, es senaldo en la literatura como un factor limitante de su consumo. Sin embargo, la cuantificacion de la diferencia entre los precios de ambos aceites es una cuestion que no ha sido abordada en la literatura, y que constituye el principal objetivo de este trabajo, en el que, ademas, se analizan las relacioens entre la evolucion de los precios del AOVEE y del AOVEC. Para ello, se ha creado una base de datos de precios de destino, a la que se le aplican distintos analisis estadisticos. Los resultados confirman que la diferencia entre los precios de ambos aceites es de tal dimension que supera las maximas disposiciones de los consumidores a pagar pro el AOVEE. En consecuencia, la principal conclusion es que el diferencial de precios -sobreprecio- entre el AOVEE y el AOVEC es un freno al desarrollo de la demanda del AOVEE en Espana. The high price of organic extra virgin olive oil _AOVEE- front of his namesake conventional, extra virgin olive oil conventionally produced -AOVEC-,is noted in the literature as a factor limiting their use. However, measuring the difference between the prices of both oils is a matter that has not been discussed in literature, and that is the main objective of this work, which also analyzes the relationship between the evolution of prices of AOVEE and AOVEC. To do so, it has been created a database of target prices, which are applied various statistical analysis. Results confirm that the difference between the prices of of both oils is of such dimension that exceeds the maximum willingness to pay for AOVEE. Therefore, the main conclusion is that the price differential between AOVEC and AOVEE is an obstacle to the development of AOVEE demand in Spain.
